For Hoegaarden Beer, there are two implements being held in the logo. What are they? What are they used for?
Ok, so the Hoegaarden Beer logo has two "shields" in it. One is in the foreground, one is in the background.
The foreground shield has a picture of a hand holding what appears to be a crook, it looks a little bit Egyptian or Persian. What is the hand really holding, what is its use, and what is its significance?
The background shield has a picture of a hand holding what appears to be some form of trident or even lantern, although I really don't know. What is the hand really holding, what is its use, and what is its significance?

Okay, I believe the implement in the foreground is pretty much exactly what you think it is - a shepherd's crook or staff or possibly a Bishop's crosier - which is essentially the same thing, symbolically.
The other implement is not a lantern or a trident - it's actually a mash paddle - an implement used by a brewer in the mash tun - a large, metal pot used for cooking the grains used in the brewing process. The mash, when mixed with the water, hops, etc ...and boiled becomes what's known at the "wort."
I don't know, specifically, why these are used by Brouerij Van Hoegaarden in their logo, but I'd guess that they wanted to tie in the ecclesiastical roots of brewing in Belgium with the art of brewing itself - what better way to do this but to use a instrument from both "trades."
